Ingredient overview
Pea fibre is obtained from fibre-rich fractions of peas. Two important sources are the outer hull and the inner seed material remaining after separation of starch and protein. These routes produce different fibre matrices.
Hull-rich material emphasises the structure of the seed coat. Inner-seed fibre retains a different cell-wall composition and varying amounts of residual starch and protein. Both provide particulate fibre, but their hydration, colour and sensory characteristics reflect the fraction from which they are produced.

Formulation behaviour
Pea fibre takes up water during mixing and equilibration. The resulting consistency depends on fibre structure as well as any starch or protein remaining in the preparation. Heat can gelatinise residual starch and modify proteins, creating effects beyond the fibre's own hydration.
In formed products, the hydrated particles occupy space within the protein and binder network. Their size and distribution influence the balance between tenderness, firmness and visible texture. In bakery, the same water-holding behaviour changes the water available to flour components. Hull-derived and inner-seed preparations therefore have distinct formulation profiles.
Material forms
Pea hull fibre and inner-seed fibre are the main compositional distinctions. Fine and coarser milled powders provide different particle profiles. Pea protein, pea starch and starch-derived soluble pea dextrin are separate ingredients from these cell-wall fibre preparations.
Comparison with related ingredients
Chickpea fibre offers a related pulse-derived matrix with different source characteristics. Refined wheat fibre generally emphasises an insoluble structural fraction. Citrus fibre contains a different pectin-associated matrix and often provides a stronger contribution to sauce-like consistency.
