Ingredient overview

Acacia fibre is a purified, dried gum obtained from acacia tree exudates. Its carbohydrate structure contains branched polysaccharides, including arabinogalactan components, together with a small associated protein fraction. This structure gives acacia a different behaviour from linear, strongly thickening gums.

In food formulations, acacia fibre contributes soluble solids without the rapid gel formation associated with psyllium or the high viscosity of native guar gum. Its principal role in fibre-enriched products is to increase fibre content while retaining a fluid or readily dispersible format.

Formulation behaviour

Acacia powder wets progressively as water reaches the particle surface. Distribution through other dry ingredients separates particles before liquid addition and reduces local concentrations of gum. Agglomeration changes the physical wetting behaviour while retaining the underlying ingredient identity.

The viscosity of the complete product also reflects protein, starch, other gums and total solids. Acacia's low-viscosity profile therefore describes its own contribution rather than the consistency of the finished formulation. In emulsified products, gum selected primarily for fibre enrichment and gum engineered for emulsion stabilisation occupy different functional roles.

Material forms

Spray-dried powders provide a fine, readily blendable format. Agglomerated powders have larger composite particles that alter flow and wetting. Botanical source, purification and drying influence the gum's composition and sensory properties. Fibre-focused acacia preparations and beverage-emulsion preparations belong to the same ingredient family but have different performance priorities.

Comparison with related ingredients

PHGG is another low-viscosity soluble fibre, produced by hydrolysing guar rather than purifying acacia exudate. Chicory inulin is a fructan and offers a different chain-length-dependent texture profile. Psyllium forms a hydrated mucilage with substantially greater effects on consistency.
