Resistant Dextrin

A starch-derived soluble fibre with a low-viscosity profile for beverages, nutrition powders and foods where dissolved fibre is preferred to particulate bulk.

Ingredient overview

Resistant dextrin is produced by processing starch to create carbohydrate structures that are less susceptible to digestion than conventional starch hydrolysates. Depending on the route, controlled thermal, acid and enzymatic steps create and refine the resistant carbohydrate fraction.

The resulting material contains soluble glucose-based chains with a distribution of molecular sizes and linkages. It behaves differently from native starch granules and from ordinary digestible maltodextrin. Its main technical role is soluble fibre enrichment with relatively limited thickening.

Formulation behaviour

Resistant dextrin distributes through available water. It does not undergo the same granule swelling and gelatinisation as native starch. In concentrated foods, its effect on consistency comes from the total dissolved-solids system and its interaction with the other carbohydrates present.

Powders and syrups introduce different water balances. Small carbohydrates remaining in a preparation influence sweetness and browning, while the resistant fraction contributes to fibre composition. Replacing another ingredient with resistant dextrin also changes that ingredient's protein, starch or sugar contribution, so the resulting matrix reflects the complete substitution.

Material forms

Preparations differ by starch source, production route, fibre concentration, residual carbohydrates and physical form. Resistant maltodextrin and resistant dextrin are overlapping commercial descriptions whose precise composition follows the process. Source-labelled soluble corn or tapioca fibres can overlap with this family rather than representing wholly separate chemistries.

Comparison with related ingredients

Conventional maltodextrin is primarily digestible and is not equivalent to resistant dextrin. High-amylose maize resistant starch retains a granular particulate structure. PHGG also offers low-viscosity soluble fibre but is derived from hydrolysed guar galactomannan.
