Ingredient overview
Citrus fibre is produced from fibre-rich citrus material, commonly associated with juice processing. It contains a combination of cellulose, hemicellulose and pectin within a plant cell-wall matrix. Processing opens and refines that matrix to different degrees.
Its functionality comes from the interaction of this structure with water and, in suitable formulations, oil. Citrus fibre adds body through hydrated particles and associated soluble material. It is a broader plant-derived ingredient than isolated citrus pectin and produces a different texture.

Formulation behaviour
Citrus fibre develops functionality as water penetrates the fibre structure. Dry dispersion separates particles before hydration; mechanical mixing then distributes the hydrated material throughout the product. The effect of shear depends on how the fibre has already been processed and on the viscosity of the surrounding phase.
Hydration history affects the final consistency. Fibre added directly to a concentrated sauce behaves differently from fibre dispersed in a less concentrated water phase. In emulsified products, citrus fibre can support the physical structure, while the complete system still reflects oil content, droplet formation and the other ingredients present.
Material forms
Citrus fibre powders differ in fruit source, cell-wall composition, particle size and the extent of physical processing. Some commercial preparations combine citrus fibre with additional texturising ingredients; these are composite systems with a different composition from a single-ingredient citrus fibre. Powder fineness and soluble-to-insoluble balance are independent characteristics.
Comparison with related ingredients
Apple fibre brings a more recognisable fruit-pomace character in many preparations. Pectin is an isolated polysaccharide with defined gelling mechanisms. Powdered cellulose provides an insoluble structural fibre without citrus fibre's pectin-containing matrix.
