Formulation behaviour
Millet fibre takes part in the water balance of dough and batter. Bran-rich particles hydrate differently from flour starch, while residual lipids and proteins contribute additional matrix behaviour. Increasing the fibre-rich fraction consequently changes more than the nominal fibre content.

Wheat and oat fibres provide alternative cereal sources, often with more extensively refined insoluble structures. Rice fibre has its own bran and purification distinctions. Whole millet flour retains more of the grain's starch and is a separate formulation ingredient from a fibre concentrate.
