Bakery Fibre Blend Development
Explore a fibre blend around the handling, volume and texture requirements of a baked product.
Development focus
Bread, biscuits and crackers need separate trials. Water adjustment and the control recipe are central to a meaningful comparison.
Your brief
Flour system; process; water level; fibre objective; volume, spread or bite target; storage-texture requirement.
Scope to agree
A formulation brief; candidate blend direction; water-adjustment trial plan; agreed finished-product evaluation criteria.
Materials to discuss
Discuss oat fibre, citrus fibre or wheat fibre around the target structure and water management. A fine insoluble fibre and a strongly hydrating material will not behave alike at the same addition level. The flour, fat and sugar system remains part of the brief.
Plan a useful formulation trial
Compare the control recipe with a planned range of water adjustments. Record mixing behaviour, dough handling, forming and bake loss before judging the finished texture. Bread trials should track volume and crumb; biscuit trials should track spread and bite. Assess texture after cooling and during the intended storage period. Agree the analytical basis for fibre contribution separately from the sensory comparison.
