Psyllium for Bakery Applications

Select psyllium for gluten-free bread, flatbreads and wraps by testing water balance, dough handling and texture after baking.

Psyllium in bread and dough

Hydrated psyllium forms a viscous matrix that can support cohesion in dough. It also takes up water that would otherwise be available to starches and proteins. The inclusion level, water addition and hydration time therefore need to be considered together.

Bakery grade describes an intended use rather than a universal specification. A format suited to a flexible wrap may not give the required volume or crumb in a loaf.

What to compare in a baking trial

Product Trial observations
Gluten-free bread Mixing consistency, proofing, loaf volume, crumb and gumminess after cooling.
Flatbreads and wraps Rolling, sticking, flexibility and cracking after storage.
Bakery premixes Blend uniformity, water instructions and batch consistency.

Keep the flour blend and process fixed while comparing the selected husk grades. Record water additions and resting times, then review texture after cooling and during the intended shelf life.

Grade information for your enquiry

Share the recipe type, current hydration level, equipment and texture problem. Ask for purity, particle distribution, moisture, microbial limits and relevant documentation. A bakery designation alone does not establish gluten-free certification; any certification needs to cover the selected material and supply chain.

For drinks and sachets, compare instantised psyllium, where wetting and dispersion are the first trial priorities.
