Ingredient overview

Food-grade sugarcane fibre is produced from fibrous sugarcane material, commonly the structural residue remaining after juice extraction. Refining and controlled size reduction create a food ingredient from this cellulose- and hemicellulose-containing matrix.

The functional material is the plant cell wall rather than the extracted cane juice. Its main contribution is a hydrated insoluble particle structure. The degree of purification and the resulting particle profile determine how much source character remains and how the fibre integrates into a food.

Formulation behaviour

Sugarcane fibre takes up part of the formulation water while retaining its particulate identity. In doughs, this changes the balance of water available to flour, starch and proteins. In formed products, the hydrated particles contribute to the physical arrangement of the matrix.

Fibre length and particle fineness affect mouthfeel and mixing. Fine preparations reduce the visibility of individual fibres, while longer particles contribute a different structural effect. The refining process also changes the composition of the source material, so raw bagasse and a finished food-grade fibre are different physical and compositional materials.

Food preparations differ in purification, particle size and fibre length. More extensive refining changes the balance of cellulose, other cell-wall material and residual plant components. The sugarcane source describes origin; the powder's physical and compositional characteristics describe its food functionality.

Wheat and oat fibres offer related insoluble structures from cereal sources. Powdered cellulose is a more specifically purified cellulose category. Resistant dextrin is soluble and produced from starch rather than from a retained cell-wall matrix.
