Ingredient overview

Oat beta-glucan is a mixed-linkage polysaccharide found in oat cell walls. It contains glucose units joined through beta-(1→3) and beta-(1→4) linkages. The distribution of these linkages gives cereal beta-glucan its characteristic solution behaviour.

Oat bran fractions and concentrated beta-glucan preparations contain different amounts of accompanying starch, protein and insoluble fibre. The beta-glucan polymer itself also varies in molecular size. Composition and molecular integrity together determine how the ingredient behaves during hydration and food processing.

Formulation behaviour

Beta-glucan hydration is influenced by powder dispersion, temperature and the accessibility of the polymer within the source material. A concentrated extract and an oat bran powder release soluble polymer differently. Starch in a less refined preparation can also gelatinise during cooking, adding another source of viscosity.

Processing enzymes change beta-glucan chain length. This can reduce viscosity even where the total amount of beta-glucan has changed little. Texture is therefore connected to molecular size as well as content. Hydration time and measurement temperature also explain differences between an immediately mixed sample and the same formulation after equilibration.

Material forms

Oat bran and bran concentrates retain a grain matrix. Beta-glucan concentrates increase the target polymer's proportion, while more purified preparations reduce accompanying components. Concentration, molecular size and particle format are distinct characteristics. Total dietary fibre includes components beyond beta-glucan.

Comparison with related ingredients

Oat fibre is commonly an insoluble hull- or stem-derived ingredient and is not another name for oat beta-glucan. Barley beta-glucan has the same general mixed-linkage polymer family but a different cereal source. PHGG supplies soluble fibre with a lower-viscosity functional profile.
