Green bananas contain a starch-rich matrix before ripening converts much of that starch into sugars. Drying and milling produce green banana flour, while further fractionation can create ingredients with a greater emphasis on fibre-rich material.

The term green banana fibre therefore covers preparations with different balances of starch and cell-wall components. Native resistant starch is associated with the unripe fruit's granular starch structure. That structure responds to moisture and heat, making processing history particularly important to the finished ingredient's behaviour.

Formulation behaviour

Native banana starch behaves differently before and after cooking. With sufficient water and heat, granules swell and lose their original ordered structure. This changes both texture and the proportion of starch that remains resistant to digestion. Cooling can create additional starch organisation, but it does not simply restore the original material.

In bakery, replacing part of a cereal flour changes the balance of gluten-forming protein, starch and fibre. The resulting volume and bite reflect that new composition. The maturity of the fruit and the drying process also affect residual sugars, colour and the behaviour of the flour during heating.

Material forms

Green banana flour retains a broad fruit matrix. Fibre-enriched fractions contain a different ratio of cell-wall material to starch. Peel-derived and pulp-derived preparations are separate materials with distinct compositions. Native flour and pre-cooked preparations also differ in starch structure and cold-water behaviour.

Comparison with related ingredients

High-amylose maize resistant starch provides a more focused starch-derived ingredient. Coconut fibre contributes a different plant matrix with more emphasis on insoluble fibre and residual kernel components. Resistant dextrin is soluble and does not retain native starch granules.
