Ingredient overview
Flax fibre is obtained from fibre-rich flaxseed material. Depending on fractionation, it contains varying proportions of the seed coat, soluble mucilage and the solids remaining after oil extraction. The mucilage originates in the outer seed tissues and contains more than one polysaccharide component.
This mixed composition gives flax fibre two distinct contributions: hydrated plant particles and viscosity from soluble material. More refined mucilage preparations emphasise the second effect, while milled or defatted seed fractions retain a broader food matrix.

Formulation behaviour
The mucilage hydrates as water reaches the seed-derived material. This causes consistency to develop over time rather than solely at the instant of mixing. In doughs, that development changes the balance between free water and the water associated with the fibre.
Defatting changes the relative proportions of fibre, protein and oil. Fine milling improves distribution but also exposes more of the remaining oil-bearing material. In a formed product, hydrated flax contributes to cohesion; the finished structure still arises from the full combination of fibre, protein, starch and processing. Isolated flax mucilage produces a smoother liquid-phase effect than a seed-coat-rich powder.
Material forms
Forms include milled fibre-rich seed fractions, partially defatted meal and separated mucilage preparations. Seed colour, oil removal and particle size provide additional distinctions. Flax meal and flax fibre are overlapping commercial descriptions, whereas an isolated mucilage is a more specific extracted material with different composition and functionality.
Comparison with related ingredients
Psyllium provides a more pronounced husk-derived mucilage structure. Fenugreek gum is dominated by galactomannan rather than flax's mixed mucilage components. Purified cereal fibres contribute insoluble structure with less seed character and a different residual-oil profile.
