Resistant starch is starch that resists digestion in the small intestine.
That sounds strange because we usually think starch means energy. But some starch escapes early digestion and reaches the large intestine, where gut bacteria can ferment it. This makes resistant starch behave partly like fibre.
You can find resistant starch in foods like raw banana flour, cooked and cooled rice, cooked and cooled potato, legumes and some whole grains. The amount depends on the food, processing and preparation. For example, rice that has been cooked and cooled develops more resistant starch than the same rice eaten fresh and hot, though it is still not a free pass to overeat.
Resistant starch is discussed in gut health because fermentation can produce short chain fatty acids such as butyrate. It is also discussed in metabolic nutrition, but claims should stay careful and food based.
In Indian meals, you can use resistant starch practically. Try chana, rajma, dal, cooled rice salads, cooled potato in small portions, or raw banana flour in specific recipes. Increase gradually because fermentation can cause gas.
Resistant starch is not a miracle starch. It is a useful reminder that food behaviour changes with structure, cooking and the gut.
