A rice plate can be improved without removing rice.
Start by keeping rice as the base, then build around it. Add dal, sambar, rajma, chole, kadhi with besan, or curd if it suits you. Add one cooked sabzi and one crunchy element like cucumber, carrot, onion or kachumber. This changes the meal from mostly starch to a more fibre rich plate.
White rice is lower in fibre, but the whole meal decides the final effect. Rice with dal and bhindi is very different from rice with fried potato. Rice with sambar and vegetables is different from rice with papad and pickle. You can also try mixing small amounts of millets, brown rice or cooked and cooled rice if you enjoy the texture.
Portion order helps some people. Eat salad or vegetables first, then dal and rice together. Chew properly. Do not drink fruit juice with the meal if whole fruit later would be better.

The goal is not rice guilt. It is rice intelligence. Fibre from dal, vegetables and salad makes the plate more balanced and more satisfying.
